Four Foods On Friday #62

#1. Waffles. Do you usually eat frozen or homemade?
Aside from the mess, there are a few major problems I encounter when making waffles or pancakes from scratch:

1. The food gets cold quickly. I always tell my family to start eating immediately after a few waffles/pancakes are done cooking, but they usually delay so the food is cold by the time they get to it. I know the trick of putting a plate of the finished waffles/pancakes into a low oven to keep the food warm, but – go figure – I never think to do it when I am cooking.

2. I tend to eat while I am cooking. I nibble on the failures – the ones that are done, but not done enough – because I’m impatient and I also know that they are going to get cold. By the time I am actually finished making everything, I’m no longer hungry!

3. I can never get waffles/pancakes done “right.” Okay, here’s how it goes for me with pancakes, specifically… The first few pancakes are generally cooked, but not browned enough. I crank up the heat a bit, make a few more, and of course the butter and oil combo burns and makes the bottom of the pan all nasty. Now the pan is too hot and, after wiping it out and putting fresh butter and oil in there, I crank the heat back. Time goes on, more pancakes are made, and eventually the last few pancake are just right, but there is no more batter.

Frozen waffles are just so quick and easy to make. I am not going to speak for everyone, but at least for me there are no messes or complications involved with using a toaster. :wink: I actually bought two boxes, one blueberry and one cinnamon, of the Eggos Nutragrain waffles the other day. I haven’t tried the cinnamon ones, but the blueberry ones are awfully good.

#2. Eggs. Do you buy brown, white, or it doesn’t matter?
I do notice the difference between brown and white eggs, Egglands Best and generic “store or whatever brand” eggs; however, when it comes down to it, I generally go for quantity. In our house, between me baking and my dad making breakfast every morning, we go through eggs too fast to be worrying about which brand is which all the time.

#3. Oatmeal. Do you usually make instant or cooked?
Again, instant is just quick and easy. I would like to get into the habit of trying to make cooked, plain oatmeal more often and adding my own flavorings to it; it would probably be healthier.

#4. Bacon. Share instructions or a recipe that you use bacon in.
I eat veggie bacon. :grin: I substitute it for anywhere “real” (meat) bacon is called for. I think the best thing I made with it was really simple; it was a BLT, but better. I used baby greens instead of the Iceberg lettuce, veggie bacon instead of pork bacon, lemon parsley mayo, avocado, and tomato. Yum yum yum… :yummy:

    When I make waffles or pancakes, I keep the oven on warm and keep each batch there for safekeeping until I have enough for everyone.
