Four Foods On Friday #65

#1. What’s the funniest sounding food or ingredient you know of?
Bok choy

#4. Share a recipe that calls for mozzarella cheese.
I mix up this variation of caprese salad in the summer time and serve it over arugula or mixed greens. Keep in mind that I hardly measure ingredients for salads and such, so my best estimate is given on proportions:

-One pint of 1in sized mozzarella balls, cut in half
-One pint of grape or cherry tomatoes, cut in half
-One medium red onion, sliced (optional)
-Fresh basil leaves, torn (or chiffonade, if you really want to bother dirtying a knife)
-Salt and pepper, to taste

Throw all of those ingredients into a bowl with balsamic dressing (balsamic vinegar, freshly minced garlic, dijon mustard, salt and pepper, extra virgin olive oil), and let marinade in the fridge, covered, until ready to serve over the lettuce of your choice.

    Mmm, that sounds like a really good salad. (I used to never eat vegetables (no, seriously), so learning to enjoy salad was a Big Deal.)
