#1. Do you celebrate Memorial Day with a picnic, cookout, road trip or some other way?
For two years in a row, my cousin has had a Memorial Day BBQ at her apartment. I think this year topped last year, hands down.
#2. What are staples at your summer time cookouts?
For the meat-eaters: hamburgers and hot dogs.
For me (the sole vegetarian): veggie burgers, of some kind.
For everyone: salads, of various kinds; corn on the cob; a ton of desserts, of various kinds (the best part, as far as I am concerned).
Pretty standard things… I’ll generally jazz up the salads, in some way, and make several other things.
#3. What drink do you find most refreshing on a hot summer day?
Iced coffee.
#4. Share a recipe for a picnic side dish.
Like I said, I like to jazz up traditional salads. The potato salad I commonly make has a southwestern kind-of twist to it. To the potatoes, I add diced green or red bell pepper, scallions, diced carrots, a ton of cilantro, and a tangy dressing made with lime juice and zest among other things.
