Four Foods On Friday #39

#1. When you need to serve desserts, do you buy them or make them?
I generally enjoy making every meal myself, especially desserts which I find to be among the most enjoyable (and yummy!) things to cook, but I have no shame in buying a boxed mix or a pre-made confection if I just don’t have the time to make one myself.

#2. When baking do you use butter, margarine or something else?
It depends on what the recipe calls for, but I generally use butter and sometimes vegetable shortening.

#3. What meats or veggies do you cook in the oven?
I don’t eat meat, but I love roasted vegetables, oven-baked french fries, and a lot of other things cooked in the oven.

#4. Share a recipe for anything that is cooked in an oven.
Last night I made some really good chocolate cupcakes with homemade white chocolate buttercream frosting. The recipe for the cupcakes came from the back of the Hershey cocoa powder box, and the buttercream recipe was one which I printed off of the computer as a general guideline and then tweaked to suit my tastes.

The buttercream recipe that I found calls for:

  • 1/2c (2 sticks) butter
  • 1/2c shortening
  • 4c confectioners sugar
  • 2tsp vanilla extract

My tweaked recipe calls for:

  • 1c (4 sticks) butter
  • 2tsp vanilla extract
  • about 4oz melted white chocolate*
  • confectioners sugar (added to taste)*

Either way, combine all ingredients in either recipe and beat the mixture to hell. The frosting should be soft, but if it is too soft put the bowl in the freezer or refrigerator for a few.

At room temperature, the frosting will be fluffy, delicious, and very easy to spread. When refrigerated, the frosting will harden up and turn back to the consistency of cold butter – still good, but I am guessing that if the cupcakes are left out at room temperature for a while before serving, everything will taste better again.

* With that amount of white chocolate, the flavour was very subtle, and since I don’t like really sweet frosting I added the confectioners sugar to taste. Feel free to adjust and balance the sugar and white chocolate according to your personal taste.

    I once made a disastrous white chocolate frosting, so it’s good to know there’s a recipe out there that works!

    Oooh, yay, cupcakes. I made some yesterday myself. I actually ran out to buy frosting. I wish I’d checked the FFOF thing sooner. I could have made it myself.
