Kitchen Tips: Transforming Leftovers Like a “Kitchen Ninja”

There is nothing worse than coming home from work or school and having to scrounge around for something to eat, especially if you are exhausted from a long day and have dietary restrictions (by choice or by default.) I don't think there is a person on this planet who can say that he/she doesn't appreciate coming home to dinner on the table. For me, it's always a treat to have other people cook for me, partially because I usually end up cooking or going out most of the time. Not too long ago, ... Continue Reading

Diet Progress: Day 3

More pictures today!! Yay, pictures! :D I realize that some people like to have intense work outs to get into shape, feel better, or look great in a swimsuit during the summer. Lunch around noon was a veggie "chicken" patty on one slice of whole grain bread with mustard and tomato, a side of steamed mixed veggies (Green Giant kind or something), and a bottle of water. A handful of pretzels was a midday snack. After that, I got side-tracked... :frown: I didn't get to the mall yesterday like I had planned on, but I caught up on some work ... Continue Reading

Recipe: Chickpea Stew

I did a Google search the other day for vegetable stew because I was in a "stew" kind of mood since it was chilly out, and I found a great recipe for a Middle Eastern-inspired chickpea stew. Of course I added to the recipe and changed a few things, but overall it turned out wonderful served over couscous. This is supposed to be a hearty stew, so don't chop the vegetables too fine. I stuck to a medium dice on most of the vegetables and cut the carrots into half-moons about 1/4 inch thick, and everything ... Continue Reading
